We are serving boudin and it's made from scratch in our kitchen! Boudin originated in South Louisiana. It is a mixture of pork, onions, bell pepper, celery, rice, and seasonings. Boudin Links are stuffed into a natural casing like a sausage. Boudin Balls are rolled in a bread crumb and deep-fried. With hot sauce or homemade remoulade both are outstanding.
